Happy New Year 2012!!

Hello there folks,

Happy Blessed New Year 2012!!! It is good to be back home after a wintery holiday in UK! My family truly enjoyed ourselves to the brim except for the really really cold English winter which had us all shivering to the bones and teeth chattering! Nevertheless, this is one great holiday which we will all remember for the rest of our lives!

Christmas Cupcakes

Ooooo......doesn't this gorgeous Christmas Cupcakes look simply delicious to you???? These are lovely layered Christmas Cupcakes with buttercream. 

If you are thinking of what to prepare for your little Christmas Party.........why not give this a try. I am pretty sure your guests (young or old) will definitely be tempted to try it out :)

Ingredients

• 2 1/4 cups all purpose flour
• 1 1/3 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup shortening
• 1 cup milk
• 1 teaspoon vanilla
• 2 large eggs
 

Easy Cupcake Recipe Directions

Preheat oven to 350 degrees. Line cupcake pans with paper liners.

Combine flour, sugar, baking powder, and salt in a large mixing bowl.  Add shortening, milk, and vanilla.  Beat for 1 minute on medium speed.  Scrape side of bowl with a spatula.

Add eggs to the mixture.  Beat for 1 minute on medium speed.  Scrape bowl again.  Beat on high speed for 1 minute 30 seconds until well mixed.

**Separate batter into two portions - one for the red and the other for the green**

Spoon cupcake batter into paper liners until 1/2 to 2/3 full.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pans then remove and place on wire racks to cool completely.

Once cupcakes are completely cooled, cut into layers and frost with your favorite frosting recipe or decorate as you desire.

"POP" goes the...crackers!

Remember the good ol' days of "popping" the christmas crackers during christmas parties? I always looked forward to popping one so that I could get my hands on those cute little novelty items inside.

I took this picture of some really old christmas crackers which my mum kept all these years since when my brothers and I were little kids (it's more than 20 years old believe it or not!!). Its was so pretty that my mum decided to keep them and made sure that we did not lay our hands on them. And it's still looking good.....if only I could peek in and see what's inside.... :) Feliz Navidad!
